Description
Alfredo Maestro A dos Tiempos is a unique red wine made from Garnacha and Tempranillo grapes by the Alfredo Maestro winery in Peñafiel, Valladolid, under the Castilla y León appellation.
Winemaking
Two harvests are carried out at two different times, up to three weeks apart, by hand. The grapes are destemmed and crushed immediately after harvesting. Maceration is then carried out for up to 25 days. Alcoholic fermentation is carried out in a 1000 litre stainless steel tank with daily pumping over with the vineyard’s own indigenous yeasts without any corrections or additions.
Malolactic fermentation is also carried out in stainless steel tanks for approximately 20-30 days. The wine is aged for 6 months in second year French oak barrels.
Before bottling, both wines obtained from the two harvests are blended in an attempt to achieve freshness and ripeness of fruit and tannins.
