Presented with a red stamp on the back label that says ‘Saca 1/2017,’ the January 2017 bottling of the exceptionally old NV Fino Capataz Solera de la Casa revealed an unusual complexity and depth showing old age and at the same incredible balance and elegance. When most people consider Montilla Fino to be less elegant than the ones from Jerez, they surely don’t think about wines like this. The wine, produced with Pedro Ximénez grapes, is believed to exceed 12 years of age and is about to start its way into an Amontillado, but the oxidative character is almost nonexistent. 1,800 375-milliliter bottles were filled in this second saca.
