I tasted a new bottling of the NV Solera Cream Tía Sabina from October 2021, an old Oloroso mixed with sweet Pedro Ximénez with 18% alcohol and 121 grams of residual sugar. With an average age of 25 years, it’s a mahogany-colored and serious sweet wine with notes of caramelized nuts and nougat. The round palate is notably sweet but balanced. 6,000 half bottles produced. The price is for a half bottle.
