This exquisite champagne comes from the dipartimento dell’Aube, specifically from the Côte des Bars. The grapes used for its production are Pinot Noir and Chardonnay, which are grown on clay soils cultivated under organic practices. These vineyards not only benefit from homeopathic products, but aromatherapy is also used to care for them.
Winemaking
The production of this champagne is meticulous and traditional. After a manual harvest, the grapes are pressed and the must is left to decant for 12 hours in specific containers. Spontaneous fermentation is carried out by parcels in steel tanks and wooden barrels. To avoid the excessive use of sulphites, malolactic fermentation is carried out spontaneously at Beaufort.
