Description
Arenas de Santyuste is a natural white wine made from Verdejo grapes by the Bodega Esmeralda García in Santiuste de San Juan Bautista (Segovia) in the Castilla y León region of Spain.
The grapes come from vineyards that are between 140 and 220 years old planted on deep sandy-loam limestone soils, at an altitude of 800 to 850 metres above sea level.
Winemaking
The grapes are harvested by hand. Once the grapes arrive at the winery, they are gently pressed and, after a natural static racking, the must is fermented in stainless steel tanks (70%) and earthenware jars (30%) with indigenous yeasts.
When fermentation is complete, the wine is left to settle for 3 months in stainless steel tanks (70%) and earthenware jars (30%) on its lees. This wine is bottled without fining or filtering and without added sulphites.
Taste
Arenas de Santyuste is a white wine with a fruity aroma. In the mouth it is round, with a certain texture and elegance. With a marked bitterness and a long, pleasant finish. It is a surprising result of the Verdejo grape variety.
