Winemaking
The Pouilly-Fuissé Les Insarts wine comes from the processing of a single type of grape, the Chardonnay, which is why it is defined as a single varietal. After being cultivated in clay and calcareous soils, which are decisive in its flavour, the grapes are harvested by hand, ensuring that each cluster retains the freshness, flavour and distinctive aroma of this wine.
Then, the fruit is subjected to a selection process where only the best grapes qualify to be pressed and the must is extracted. This liquid is then fermented in Burgundian oak barrels and aged for 11 months.
