Description
Cueva Supertack is a white wine made exclusively from Tardana grapes by Bodegas Cueva in Spain.
The Tardana grapes used to produce this wine come from vineyards grown on clay-limestone soils located at 650-700 metres above sea level in the Utiel-Requena area (Valencian Community).
Winemaking
The grapes are harvested by hand. The product is subjected to a total destemming and a 5-6 day skin maceration of the Tardana grapes with a single pumping-over. Alcoholic fermentation is carried out with indigenous yeasts together with Bobal lees in stainless steel tanks.
Finally, the wine is aged on its fine lees for a minimum of 4 months in the bottle. No filtration, stabilisation or clarification is carried out.
Taste
Cueva Supertack is a white wine with fruity aromas and surprisingly light tannins, it is fresh and balanced, very structured and persistent.
A light and crisp wine
Cueva Supertack has been elaborated with grapes of the tardana variety, a late ripening grape that produces wines of exceptional personality.
The winery uses organically grown grapes and the winemaking is done in a natural way, without filters or treatments, all of which is combined with the most innovative technology in the preservation, bottling and labelling of the wines that come out of the Bodega Cueva winery.
In the gastronomic field this wine is perfect as an aperitif and to accompany essentially oriental food, especially sushi, cheeses, spicy dishes and blue fish.
