Denavolo is an Italian winery located in the Emilia-Romagna region, which has excelled in making natural and biodynamic wines with a focus on organic farming and minimal intervention in the winery.
One of Denavolo’s best known wines is «Dinavolino», a white wine made from the local grapes of the area, such as Malvasia di Candia Aromatica and Marsanne. This wine is said to have a complex and balanced taste, with notes of fruit and spices, as well as a refreshing acidity.
Winemaking
Dinavolino comes from the winery’s lower vineyards, it is a white wine that is made in the same way as most reds, resulting in what is generally known as an orange wine.
On arrival at the winery, the grapes are destemmed and pressed to release the must. It is then incubated and the must is fermented with indigenous yeasts.
The grapes are macerated for 9 months in stainless steel tanks.
Taste
Dinavolino is a floral and fruity wine, with herbal and mineral notes. It also has hints of citrus and spices. The palate is fresh, dynamic and energetic, with intense mineral aromas.

Dinavolino is a vegan wine with an alcoholic potential of around 11.5%, which means that no sulphites are added in its production, because its acidity protects it.
