The lighter and delicate red 2019 Dominio del Pidio fermented with 12% full clusters and is not 100% Tempranillo, as it includes 8% to 10% white Albillo Mayor grapes that make it fine-boned and a little lighter and fresher despite the 14.5% alcohol. The wine has balance and elegance, integrated oak and a different profile, with less oak than the reds from the mother house Cillar de Silos. It comes from old vines on sandy soils that produce fresher and more elegant wines and cushion the effect of warmer years like 2019. It matured in 225- and 600-liter French oak barrels for 16 months. 26,847 bottles and 240 magnums produced. It was bottled in August 2021.

Description
Dominio del Pidio Tinto is made from 95% Tempranillo and 5% Albillo grapes. The origin of its vines is more than a hundred years old, which determines its particular flavour. It is an example of the new style of Ribera del Duero, which seeks to denote the presence of fruit, with elegance and freshness.
Dominio del Pidio is the second winery that has been set up in Cillar de Silo, the same has been destined for the production of wines from the municipality, using exclusively grapes from Quintana del Pidio.
Winemaking
Dominio del Pidio Tinto comes from old vines located in Quintana del Pidio. These vines are grown on sandy-clay-loam soils, at 890 metres above sea level, which largely determines its unique flavour.
For its production, the fruit is cultivated under organic farming in combination with biodynamic treatments, taking care of the environment. Production on this land is limited in terms of yield.
The harvesting phase is also carried out under traditional practices that not only guarantee that the fruit arrives at the winery in good condition, but also that the ripening stage is optimal.
After arriving at the winery, the grapes undergo a phase of spontaneous fermentation in cement tanks, using indigenous yeasts. After that, the wine is aged in French oak barrels for 15 months.
Taste
Dominio del Pidio Tinto has a fruity and complex aroma, balanced with spicy and mineral notes. In the mouth it is juicy and structured, with an elegant, silky and fresh texture.
