Cold soaking with skins for 5 days. Fermented with indigenous yeasts in cement vats. Aged for 8 months in 1.000 liter Slovenian oak foudres.
Description
Eduardo Torres Versante Nord Bianco is a white wine made mainly from Minella Bianca with the addition of other white varieties by the Eduardo Torres Acosta winery in Sicily, Italy.
These grapes come from vineyards that have been planted in sandy soils of volcanic origin and are located at an altitude of 550 to 750 metres, following the principles of biodynamic agriculture.
These vineyards are cultivated by hand and no chemicals are added to preserve the natural balance of the vineyard, helping to maintain biodiversity.
Winemaking
The grapes are harvested by hand. Then, in the winery, it is vatted and fermented with autochthonous yeasts in concrete tanks without temperature control. The must is macerated with the skins for 5 days. At the end of fermentation, the wine isrefined for 8 months in used oak barrels.
At the end, it is bottled without fining or filtering, to prevent these processes from removing aromas, body and personality from the wine.
Taste
Eduardo Torres Versante Nord Bianco is a citric and mineral white wine with high aromatic and taste complexity. On the palate it is extremely citric, accompanied by light tannins and a strong acidity, very well achieved!
